FUFU CORN NJAMA NJAMA AND KATI KATI

Preparation : 30 minutes
Cook time : 1 hour
Total time : 1h 30 minutes

Ingredients :
. For the Fufu corn :
-          5 cups of Fufu corn
-          10 cups of water
. For the Njama Njama :
-          2 pounds of huckleberry fixed and blanched about 1 kg , substitutes include kale and spinach, lightly boiled and cut
-          8 tomatoes
-     2 onions
-          3 small  « Honig » or «  Maggi » cubes
-          Salt
-          1 cup of palm oil
-          2 habanero peppers
.  For the Kati Kati :
-          1 chicken plucked and slightly burnt over a flame preferably
-          1 cup of palm oil
-          1 medium sized onion
-          4 cloves of garlic
-          2 small « Honig » or «  Maggi » cubes
-          Salt
-          1 habanero pepper

Instructions :
. To make the Fufu Corn :
Firstly, put water in a pot and bring to boil
Secondly, while water is on the fire, mix half cup of Fufu corn with a cup of water
Thirdly, when water boils , remove 2 cups of it and set aside.
Fourthly, pour the paste into the remaining water in the pot and stirring continuously
Fiftly,  add in the remaining flour to the pot  , stirring continuously in a circular motion. When It is well mixed , add the water you kept aside and cover to cook for about 5-10 minutes.
Sixtly, mix the Fufu corn until everything is well incorporated . Scoop out and wrap in the warmed banana leaves.

. To make the Njama Njama :
Firstly, chop the onions and tomatoes and set aside
Secondly, heat  the palm oil in a pot. Put the chopped onions and let that fry for a while . Add in the tomatoes and let it cook until the acidity is gone.
Thirdly, season with the salt and « Maggi » or « Honig » cubes , then put in the vegetable and stir properly.

. To make the Kati Kati :
Firstly, cut the chicken into desired pieces
Secondly, put in a pot , add about 3 cups of water and bring to boil
Thirdly, chop the onions, pepper, tomatoes and garlic
Fourthly, season the chicken with the salt and « Maggi » and « Honig » cube , then add in the chopped ingredients
Fiftly, add in the palm oil , then let them cook together until all the water is gone and just the chicken and  the palm oil is left
Enjoy with Fufu corn and Njama Njama
